Pumpkin Cake Mix Cupcakes

Preheat your oven to 350 degrees f.

Pumpkin cake mix cupcakes.

Mix together the cake mix sugar oil water eggs pumpkin puree pumpkin spice and cinnamon. Blend cake mix pumpkin puree eggs water and oil in a large bowl at low speed until moistened. Bake for 18 to 23 minutes or until wooden pick inserted in center comes out clean. Place cupcake liners in 24 muffin cups or grease muffin cups.

Pour the batter into a greased cake pan and bake until a toothpick comes out mostly clean. To make these pumpkin spice cupcakes combine the cake mix plus ingredients on back minus the water pumpkin pie spice and pumpkin puree. Add the pumpkin pie spice and substitute the can of pumpkin puree for the water called for in the package directions. Stir spice cake mix and pumpkin together until a thick batter emerges and the spice cake mix is completely mixed into the pumpkin.

Blend cake mix pumpkin eggs oil and water in large mixer bowl until moistened. Divide batter evenly among muffin cups about two thirds full. Stir for 2 minutes until the batter is super smooth. Cool in pans on wire racks for 10 minutes.

Add vanilla and cinnamon and mix well. Pour batter into prepared muffin cups filling 3 4 full. In large bowl beat cake mix pumpkin water oil eggs and pumpkin pie spice with electric mixer on low speed 30 seconds then on medium speed 2 minutes scraping bowl occasionally. Increase speed to medium and beat for an additional 2 minutes.

Divide the batter among the prepared muffin tins lined with paper liners and bake at 350 degrees until a toothpick inserted into the center of a cupcake comes out. Spoon batter into muffin tins and bake for approximately 15 minutes or until a toothpick inserted into cupcake comes out clean. Beat on medium speed for 2 minutes. Prepare the cake mix as directed but with the following change.

Remove to wire racks to cool completely.
